    Food, Nutrition and Health Literacy Course (FNHL-001)

    3. What are the foods that you are eating and what do they do to your health ?

    This Food, Nutrition and Health Literacy course will aim to address these questions commonly raised in our modern world. The goals are to provide basic scientific principles of nutrition and food sciences, and practical tips that are truly relevant to our daily diet and eating lifestyles.
    The modular syllabus was designed specially by food scientist, industry expert and health sciences professional based on scientific and data driven, clinical evidenced findings:

    • the basic food nutrients, food ingredients and how to read food labels
    • more mindful when you read any food marketing communications and/or health claims
    • learn the foundation of Mindful Eating for Healthy Meal, Heathy Hydration and Healthy Snacking

    The course will be conducted in an interactive and practical manner to maximize learning effectiveness.
    Objective
    By the end of the workshop you will be able :
    1. To demonstrate knowledge of the food and dietary goals and become an informed consumer with an understanding of the relationship between food, nutrition and health
    2. To be able to read food labels and learn the essential nutrients and ingredients for healthy eating
    3. To learn the foundation of food and nutrition sciences involved in developing approved health claims and be able to discern food myths, fads and fallacies for food consumer communications
    4. To be more mindful of your eating habits

    Dr Mei H. Ong is an Adjunct Professor and lecturer for Food Science, Technology and Nutrition at Food Science and Technology Department, Faculty of Science at the National University of Singapore (NUS). Mei is also serving as Innovation Advisor for IPI, an affiliate of Enterprise Singapore to support the SME Food & Beverage industry. She is a regular guest speaker at public community health talks to promote food and nutrition literacy, embodying the guiding principles of mindful eating. Her community involvement also includes being Mentor and Advisor for start-ups in Food business in Asia.

    Mei graduated with a Bachelor of Science in Food Science and Management with honours from King’s College, University of London and obtained her PhD in Food and Science Technology from the University of Nottingham in England. She obtained her Business Executive Leadership Course from NUS and Mindfulness practitioner training and certificates in USA and Singapore.

    Formerly Chief Scientific Officer and Director, with more than 28 years proven success in R & D, Technical, Health & Nutrition, Food Safety & Regulatory Affairs and Food Manufacturing Development of Food & Beverages in Asian conglomerates and Fortune 500 companies. Her hybrid and global experience in UK, Australia, China, Hong Kong, Singapore and Malaysia puts her in demand for advocating the importance of food and nutrition literacy for healthy eating in our society.

    She was Director of FMCG cluster of the public sector agency, A*STAR where she undertook new technology programmes to facilitate public-private partnerships for advanced manufacturing and digital technologies.
